After half an hour’s wait, you are served a wrong dish.You bring it to the attention of another steward passing by. Heapologizes and you repeat your specific order to him. He returnswith the correct dish 20 minutes later. But now the salsa is spicy!You are furious but you keep your control. The steward apologizesprofusely for the error.

What sounds like a major problem in your system is that your stewards and kitchen staff are not comminicating very well. A good thing I have found work is get everybody there a short time before and have a meeting and if they make the night extra profitable kick that back in someway to them. Because then they will have incentive to work more efficiently and get people in and out increasing your maximum profit. Also another thing you can do is hire another person a head waitor that would just be incontrol of the people and keeping things running smoothly and to go around and talk to the customers. That extra waitor could act as a go to person when there is a problem and help out in that way. Also another thing that could be a problem is the layouts of the tables in the dining area.
