The work done to lift a 74 KG person 40 cm against gravity is similarly calculated, just with one more step:

W = F * D
F = M * A

W=74*9.8*0.4=290.08N

As far as the bicep being the only muscle required to do a chinup, the easiest way to test that is to act like a physicist and perform an experiment.
