The slope of velocity versus time graph reveals information about an object's acceleration. That is , If the acceleration is zero, then the velocity-time graph is a horizontal line (i.e., the slope is zero). If the acceleration is positive, then the line is an upward sloping line (i.e., the slope is positive). If the acceleration is negative i.e deceleration , then the velocity-time graph is a downward sloping line (i.e., the slope is negative).

1st slope is negative ie Deceleration.
2nd slope is positive ie Acceleration.
3rd slope is positive ie Acceleration.
(b)
Intercept of a velocity versus time graph reveals information about an object's Initial Velocity at time = 0.
If the value of intercept is 0, then the object was at rest initially , if the value is +ve, object is moving with positive velocity and if the if the value is -ve, object was moving with negative velocity ie in the opposite direction.
In Your Data , The intercept is + ve for all the three experiments which means object is moving with +ve initial velocity and magnitude is value of intercept.
