Pepsin is a proteolytic enzyme, whose main role is to digest the protein in the stomach by hydrolysis of peptide bonds. It will exist in monomeric form at a pH of 2 and exist in different forms at different pH. It will catalyzes hydrolysis of peptide bonds between hydrophobic or aromatic residues of a protein substrate. Secondary structure of pepsin consists of alpha helics, beta sheets and random coils. It has 14 percent alpha helics and 44 percent beta sheets. Secondary structure of pepsin is a crucial thing to achieve enzymatic function. Quarternary structure of pepsin is a multi subunit structure.
