Esters are a class of organic compounds that are formed by reacting alcohols with carboxylic acids. Esters generally have a pleasant odor; many of them occur normally, being found mainly in fruits. Fats and oils are esters formed from the reaction of glycerol with three fatty acids. Methyl acetate will be used as an example illustrating the formation of an ester. When acetic acid and methyl alcohol are reacted together, using sulfuric acid as a catalyst, a molecule of water is split out between a molecule of acetic acid and a molecule of the alcohol, forming the ester. Esters are named in the following manner. The first part of the name is taken from the name of the alcohol, the second pan is derived by changing the ic ending of the acid to ate Thus acetic acid becomes acetate, and the name of the ester derived from methyl alcohol and acetic acid is methyl acetate. Procedure Number four small test tubes (1 - 4) and mix the following reagents in the test tubes: Tube 1: 3 ml ethyl alcohol. 0.5 ml acetic acid. And 10 drops of concentrated sulfuric acid. Tube 2: 3 ml isoamyl alcohol. 0.5 ml acetic acid, and 10 drops of concentrated sulfuric acid. Tube 3: 3 ml 1 -propanol. 0.5 ml acetic acid, and 10 drops of concentrated sulfuric acid. Tube 4: Salicylic acid crystals (about 1 cm deep in the tube). 2 ml methyl alcohol, and 10 drops of concentrated sulfuric acid. Insert a rubber stopper in the test tube and invert once or twice to mix contents. Remove stoppers and heal the tubes by placing them in a heating block for 5 minutes. Never heat a test tube with a stopper inserted. After heating, stir the mixture with a plastic dropper and place three or four drops of each product onto a piece of filter paper and carefully smell it and describe the odor. Do not place the filter paper directly under your nose. Wave the filter paper about six inches in front of you nose as you smell. (Does the odor remind you of any natural product?).
