When the rider suddenly applies the brake and the back wheel stops rotating, the bike will flip. This will happen in accordance with the law of conservation of angular momentum. As when the back wheel was rotating before the application of breakes, it has got some angular momentum and with the application of brakes, since the angular momentum is conserved, the motorcycle will aquire the angular momentum and flip.
