I'm no oceanographer, but I think I can help you with a few of the points in your question. If I'm not mistaken, I believe that the sediment record holds fossils. Thus, if we dug up a core of the sediment record, we could dig through it and see the progress of sea animals (ones with shells and bones that don't decay as readily as flesh). I'm not exactly sure how oceanographers detect the chemistry of seawater from the sediment record, but I'm sure it must have to do with the concentrations of various compounds. However, I do know that we can tell the glacial-interglacial fluctuations in ice volume from the sediment record by analyzing the amount of salt in various divisions. If there's more ice, the salt gets concentrated in the seas more because glaciers are all frozen freshwater. Hope this helps!
