Question 4 Not yet answered Points out of 1.00 This table reports the pH and sugar content of various fruits and vegetables. The pH and sugar values will vary by variety, rainfall, and other environmental factors: the values here are average values. Analyze the data provided in this table, then select the best supported answer to the questions below. Flag question Sugar (g sugar Food pH in100 Fruits 9.1 10.1 8.7 9.8 Apricots 4.0 Blueberries 3 Peaches Pineapple 3.6 3.6 Vegetables Corn 6.6 Lettuce 6.0 Peas 6.0 6.2 3.5 0.83 5.5 0.33 Spinach A) Although this is a limited sample, what conclusion can you draw on the apparent relationship between the pH of fruits and Fruits are generally more acidic then vegetables. Fruits are generally less acidic then vegetables. O There is little difference between the acidity of fruits and vegetables. B) What hypothesis can you generate on the apparent relationship between pH and the sugar content of fruits and vegetables? An increase in sugar content is correlated to an increase in hydrogen ion concentration. A decrease in sugar content is correlated to an increase in hydrogen ion concentration. As the size of the of fruit or vegetable increases, the pH decreases. C) What is the difference in the hydrogen ion concentration between apricots and peas? Apricots are more then peas.

Explanation / Answer

A) The pH is the hydrogen ion concentration in substances. The pH below 7 is considered as acidic and above 7 is considerted as alkaline. The pH at 7 is neutral. Fruits are more acidic than the vegetables. This is because the pH of vegetables is near neutral pH of 6 and above but below 7. Option 1 is correct.

B) The relation between pH and sugar content of vegetables and fruits is inversly proportional. This means as the pH decreases, the sugar content increases and as the pH increases, the sugar content decreases. Thus, option 2 is correct.

C)

Apricots have the pH of 4.0 and peas have pH of 6.0. Therefore, the hydrogen ion concentration of apricots is more than peas. Thus, apricots are sweeter and more acidic than peas.
