Water is called the "universal solvent" because it is capable of dissolving more substances than any other. this is because The hydrogen side of each water (H2O) molecule carries a slight positive electric charge, while the oxygen side carries a slight negative electric charge helping water to dissociate ionic compounds into their positive and negative ions. The positive part of an ionic compound is attracted to the oxygen side of water while the negative portion of the compound is attracted to the hydrogen side of the water.

2)The pH scale measures how acidic or basic a substance is. The pH scale ranges from 0 to 14. A pH of 7 is neutral. A pH less than 7 is acidic. A pH greater than 7 is basic. The pH scale is logarithmic and as a result, each whole pH value below 7 is ten times more acidic than the next higher value
