After receiving the order by Judy's assistant, which takes 2 minutes, Judy then takes 8 minutes to mix the ingredients for the cake and loads a cake pan for baking. Then the cake is put into the oven for 30 minutes. The oven can hold 3 cakes at one time. When the cake is taken out of the oven it is cooled for 1 hour. The assistant then takes 2 minutes to pack the cake for pickup and bills the customer, taking 3 minutes. A. What is the process capacity and what is the bottleneck? B. What is the throughput time for a typical cake? C. If on average 5 orders are taken per hour, how many cakes are there in the process (work in process inventory)

Answer to question A :

Following are the steps and corresponding processing time :

Receiving the order = 2 minutes

Mixing ingredients and loading cake pan for baking = 8 minutes

Putting cake in oven = 30 minutes

Cooling of cake = = 60 minutes ( i.e. 1 hour )

Packing the cake = 120 seconds ( i.e. 2 minutes )

Billing the customer = 180 seconds ( i.e. 3 minutes )

The bottleneck step is the one which has maximum processing time which in this case is “Cooling of cake “ taking 1 hour time for each cake. Since process capacity is decided by the bottleneck step as arrived above , process capacity is 1 cake per hour

Answer to question B :

Since the oven can handle 3 cakes simultaneously, effective processing time at oven = 30 /3 = 10 minutes per cake

Throughput time of a typical cake

= Throughput time of receiving the order step + Thorughput time of making ingredients + Effective baking time in oven + Thorughput time of cooling a cake + throughput time of packing the cake + Throughput time of billing the customer

= 2 + 8 + 10 + 60 + 2 + 3 minutes

= 85 minutes

Answer to question C:

Rate of order taking = R = 5 orders per 60 minutes

Throughput time = T = 85 minutes

Therefore , number of cakes in the process ( as Per Little’s Law ) = R x T = 5/60 X 85 = 7.08 ON VEARGE
