Firstly i want to let you know that amino acids have carbon atom linked to one Hydrogen, one Carboxyl group(COOH), one Amino (NH2) group the fourth valency is satisfied by a unique chemical group known as side chains ,these provides different chemical properties to different amino acids and in some cases they also provide additional stablity to the amino acids. . In different amino acids they are abbrivated as R group. Often amino acids are grouped on the basis of chemical nature of their side chains which can be acidic, basic, polar,non polar and also neutral. So in this way they also determine that whether the protien will be acidic, basic, or neutral.
