They captivate customers who are retired in the city of Los Gatos with specialized dishes that change seasonally but are based around grilled meats and pizza all accompanied with a full bar that serves wine, draft beers and mixed drinks. Enjoying this space is possible with the open seating inside and out. The dining area has tables and booths. This area also can be rented out for private events that have access to a high definition projector. Based on the surrounding area of their location their primary customers are retirees (60+ years old) and business professionals who may work at surrounding businesses such as Netflix, which is located down the street. Our goal with our marketing position is to increase and sustain brand loyalty. Grill 57 offers a wide variety of dishes, drinks, and services. They offer a large food and drink selection as well as a meeting room for businesses and other organized events. Grill 57 must continue to offer outstanding services and products in order to keep their returning customers. The restaurant wants to create a home-like environment where people can come together and socialize among other people in the community. Grill 57 will gain recognition through social media websites such as facebook and instagram, as well the San Jose Mercury. With the ever growing popularity of sports, food, and drinks; Grill 57 captures all three elements and brings them together in Los Gatos, California. Grill 57 has set up in what may be the hub of California cuisine, the San Francisco Bay Area. The competitive advantage Grill 57 holds is the wide variety of food they provide as well as a full bar. The entertainment they offer includes televisions holding popular sports games. Their prime location in the South Bay holds many opportunities for marketing to a larger market. These two markets are the main focus for Grill 57, and it receives a lot of business from retirees, as well as company workers because of the neighboring communities and businesses that surround Grill 57. The ages of the customers range from 30-60+ years old. These two market segments have a large potential to grow at Grill 57 and fit the demographics that the Grill will be able to attract successfully. The menu at Grill 57 revolves around $30 entrees and the average check per person is $50. The two markets we are seeking to expand upon have the necessary expendable income necessary for regular return visits. 1. Retired (60+) The city of Los Gatos is known to have many older residents as well as a lot of retired workers. The average age of residents in Los Gatos is about 45 years old. Los Gatos demographics fit the profile of Grill 57’s target market of retirees. Retired workers have a lot of disposable income, and we would want to target them as one of our main markets. Grill 57’s ambiance is welcoming and inviting to the customers who want to dine in and relax. In addition, there are multiple local retirement communities that surround Grill 57. The new bar & restaurant is the only restaurant within walking distance of these communities. 2. Business Professionals Grill 57’s location is in the center of many large corporations. One of Netflix’s corporate buildings is located just down the street of Grill 57. On the same street there is also a business park that is home to many tech companies as well as other business corporations. Grill 57 has a large meeting room with a built in projector which is a perfect venue for business meetings and gatherings.

The Grill 57 has divided its business into two acc to me, one would be the fine dining section, another would be the business sections, where they would rent out the conference room for business meets or gatherings. The restaurant is planning to market the restaurant to the business and the locals of the Los Gatau, Calfornia, whose age range between 30-60, plus to businesses nearby. The restaurant would have to divide the kitchen in 2 too to match the demand of the fine dining and the catering for the business events. I would ask them to divide the kitchen staff in 20% would be the prep chefs who would work for both, the remaining to be divided in 50 % to the main kitchen and remaining 30% to the catering services.this step could be taken so that the customers do not have to wait for long to get their meals.

The Inventory for the main kitchen is to be planned and stored well in advance, the head chef should identify the fast-moving quantities and he should order his inventory accordingly for the dry items.The restaurant should also have tie up with the suppliers so that they could deliver the supplies for the business section as per requirement without any delays.These suppliers would also deliver the fresh supplies like vegetable and meat on daily basis to the main kitchen. The proper planning and ordering according to the perishability of the product would help us with less wastage and more profits. 2 cold storages would be required where the supplies would be stored, 1 for raw and another for precooked items.

to put this together, a proper analysis must be done about the fast-moving and perishable items, they must order it with help of Economic order quantity.
