Shut down state : This is a power-off state in which all the open programs close and the computer shuts down the operating system. So in shutdown state the computer doesn't uses any power but when you want to use your PC again, it has to go through the boot-up process, waiting for your hardware to initialize and startup programs to load. Thus depending on the system it can take from a few seconds to few minutes to start a computer after it is shut down.
Sleep state : In sleep mode, the computer enters a low-power state . The computer's state is kept in memory but all other parts are in shut down mode and hence won't use any power. When one need to use the computer again, he can resume from where he left off in just a few seconds as one doesn't have to go through the boot-up process. Everything will be right where one left of, including running apps and open documents .
To select whether to use sleep option or shut down option depends upon the time duration the computer is left idle. If you want to use the computer within 24 hours, then use the sleep option since it will consume a very small amount of energy and hence it makes negligible difference between sleep ad shut down. But if you plan to keep the computer idle and not using it for more than 24 hours, then its better to use the shut down option.
