Question

Q1 At a make-to-order hamburger shop, there is one worker who cooks patties, two workers who assemble burgers, and one cashier. The oven can cook patties in 4 minutes and the oven can cook up to 20 patties at one time. Each burger assembler can assemble a burger in 40 seconds. It takes the cashier 6 seconds to collect payment.

Let’s assume one customer orders one burger. The new oven’s capacity is the same as the existing one. Also one worker can operate two ovens.

a) (5 points) What is the capacity of the hamburger restaurant in customers per minute?1 What is the bottleneck? (

b) (5 points) If two more burger assembler is hired, what is the capacity of the burger store? What is the bottleneck?

c) (5 points) Disregarding part b), if the restaurant buys another oven,2 what is the capacity of the restaurant? What is the bottleneck?

Explanation / Answer

Answer to question a:

Number of oven = 1

Number of workers who cook in the oven = 1

Number of workers who assemble burgers = 2

Since one oven can cook patties in 4 minutes and 20 patties can be cooked at one time, effective capacity of the oven = 20/4 = 5 patties per minute

Since each burger assembler can assemble a burger in 40 seconds and 2 burgers can be assembled at a time , it can be concluded that each burger can be assembled in 20 seconds.

Therefore , effective capacity of the burger assembly process = 60 seconds/ 20 seconds = 3 patties per minute

Since it takes 1 cashier to collect payment in 6 seconds, effective capacity of the payment collection process = 60 seconds/ 6 seconds = 10 parries/ minutes

The bottleneck process will be the one with least capacity which in this case is the burger assembly process with capacity of 3 patties/ minute. Since capacity of the whole system is decided on basis of the capacity of the bottleneck process, we can concluded that capacity of the Hamburger restaurant is 3 patties per minute or 3 customers per minute.

CAPACITY OF THE HAMBURGR RESTAURANT IS 3 CUSTOMERS PER MINUTE ( BOTTLENECK : BURGER ASSEMBLY PROCESS)

Answer to question b:

Number of oven = 1

Number of workers who cook in the oven = 1

Number of workers who assemble burgers = 2 + 2 ( two more assembler are hired ) = 4

Since one oven can cook patties in 4 minutes and 20 patties can be cooked at one time, effective capacity of the oven = 20/4 = 5 patties per minute

Since each burger assembler can assemble a burger in 40 seconds and 4 burgers can be assembled at a time , it can be concluded that each burger can be assembled in 40 / 4 = 10 seconds.

Therefore , effective capacity of the burger assembly process = 60 seconds/ 10 seconds = 6 patties per minute

Since it takes 1 cashier to collect payment in 6 seconds, effective capacity of the payment collection process = 60 seconds/ 6 seconds = 10 parries/ minutes

The bottleneck process will be the one with least capacity which in this case is the oven cooking process with capacity of 5 patties/ minute. Since capacity of the whole system is decided on basis of the capacity of the bottleneck process, we can concluded that capacity of the Hamburger restaurant is 5 patties per minute or 5 customers per minute.

CAPACITY OF THE HAMBURGR RESTAURANT IS 5 CUSTOMERS PER MINUTE ( BOTTLENECK : OVEN COOKING PROCESS )

Answer to question c :

Number of oven = 1 + 1 ( purchase of new oven ) = 2

Number of workers who cook in the oven = 1

Number of workers who assemble burgers = 2

Two ovens can cook 20 x 2 = 40 patties at a time. Since each patty takes 4 minutes to cook and 40 patties can be cooked at one time, effective capacity of the oven = 40/4 = 10 patties per minute
