The Waiter records customers’ food and drink orders by writing the details on an order form. The order form is given to Kitchen staff for use when preparing the food and drinks. Once all the food and drinks have been given to the Waiter for delivery to the table, the Kitchen staff give the order form to the Cashier. The Cashier enters the order details into the computer, saves the sales details and then two copies of the bill are printed. When the customers have finished their meal, the Waiter collects one copy of the bill from the Cashier and gives it to the customer. Gamma accepts only cash payments. The customer pays the Cashier and keeps their copy of the bill as their receipt. The Cashier puts the cash in the cash drawer, writes ‘paid’ on the other copy of the bill and files it in the sales file.

If you were asked to redesign this process, what would be your major recommendation?

the orders must be informed to the counter (at cashier) and the it should be send to the chef (to the supporter to the chef) there is no need to move the waiter from the point of serve to the point of kitchen. the order must go from the supporter of the cashier, and there it should be to the chef. once the food is ready, should be collect by the waiter and serve to customers. once the meal or the customer said it is over, then bill must collect from the supporter of cashier, and is should be paid at cashier. here the person should generate 3 bills, one must remain with him, other must be proceed to cashier and other to the customer
it is more transparent than the earlier process, even the movement of people from one place to another will be minimized in this.
