3a.) state higher or lower 3b.) which species is more favored: SO2 or Hydrogen sulfite CHEMISTRY ON THE LABEL Educated Guess x (NAPA VALLEY 2007) CHARDONNAY Part A. Determining the Fixed (the pH of wine) and the Total Acidity of Wine (the Mass of Tartarie Acid per Liter of Wine) 1. Measure 100 mL of wine with a 100 ml gradua cylinder and transfer it to a 250 mL Erlenmeyer flask. 2. Bring the wine to a boil for about one minute then allow it to Pour the wine into the 100-mL graduated cylinder and bring the volume of the wine back to 100. adding deionized water. Some of the carbon dioxide formed during fermentation has dissolved in water to afford the following interdependent equilibriums. CO2 (g) CO2 (aq) heat CO2 (aq) H20 H2CO3 (aq)Explanation / Answer
a) in wine, hydrogen sufite ion is present that reacts with acid (coming from wine) to produce sulfer dioxide gas that gets dissolved into wine. If you use degassed wine, it means the sulfer dioxide gas in wine is boiled off. So the actual sulfer dioxide concentration gets reduced in degassed wine.
So, in this case the experimental value is less than accepted value.
B) pH 3 means the solution is strongly acidic and hence the acid mostly reacts with hydrogen sulfate to generate sulfer dioxide gas.
So, at pH 3 sulfer dioxide will be favoured.
