Enzymes are unique in nature which gives ultimate kinetics and seletivity to a particular function. Each enzyme is unique and specific in its function towards its substrate.

The three well known enzymes like chymotrypsin, trypsin and elastase have a unique binding pocket or active site which are designed to do a specific function.

Chymotrypsin has a deep hydrophobic binding pocket which allows long, uncharged aminoacids like phenylalanine and tryptophan. Hence, the binding pocket is very large to accomodate the aromatic rings. Also, the serine residues alongside, glycine residues, act as active amino acid in the peptide cleavage. This specific oreintation of the binding pocket keeps the peptide bond at the active reaction center which cleaves.

Trypsin, like chymotrypsin, cleaves the amido bond next to arginine and lysine aminoacicd residues. These amino acids has long and positively charged side chains which gets attracted to the negatively charged aspartate residue present in the bindidng pocket. It also contains two glycine residues.

Elaste cleaves the amido bonds present after alanine and serine which has a small side chains. The specificity of the elastase enzyme comes from the bulky valine groups present in the binding pocket which makes the size of the pocket very small. It also has serine and threonine residues in the binding pocket.
