1. In salad dressing oil and vinegar have two separate layers because they have different chemical properties. Oil is non polar and less dense in nature while vinegar is polar and more dense in nature. Moreover, we know like dissolves like.

So a polar substance will not dissolve a nonpolar substance.thus oil being non polar and less dense floats on vinegar (more dense) which settles at the bottom.
