I've got a few supplements that I'm taking for digestive ailments. Aside from the implications of what might be wrong with me I'm purely asking about the supplements interacting with each other. I know that Betaine HCL is basically hydrochloric acid and I'm taking that for increasing acidity during digestion. Potassium Citrate is used to regulate acidity. Is it logical to take the Betaine HCL with or during a meal, along with the potassium citrate? I'm also taking digestive enzymes (pancreatic enzymes) that I take with meals also.

As soon as food enters the stomach, the parietal cells are stimulated to produce HCl. Hence, as you are taking Betain-HCl for increasing acidity and potassium citrate for regulation of acidity, I think it is better to take these 2 drugs immediately after you start to eat.i.e. in the middle of a meal. The pancreatic juice is usually secreted into the small intestine to help in further digestion of the food. So, the pancreatic enzymes can be taken after a meal or at the end of a meal. This is because it will take some time for the food to cross the stomach and enter the intestine.
