Question

Consider the following scenario: You come across a new product that boldly claims to be a rich source of the same antioxidants commonly found in carrots, tomatoes and various peppers. you ? examine the product and note its appearance: it looks orange. However, you are skeptical and suspect a hoax- that the orange color might simply be from some type of food dye. Since you have recently examined some ? of the antioxidants found in paprika in your organic lab, you decide to play detective. So, show off your detective skills! ? Outline a strategy for a simple experiment that will help you determine whether the manufacturer's claims are true or false. ( 3 points )

Explanation / Answer

First, you have to extract the new product. To do this, simple crush it in a mortar-pestle, add some large amount of hydrocarbon solvent (the same which you used to extract your own anti-oxidants). The mixture will separate into two different zones - organic and aqueous. Collect the organic solvent, concentrate it by drying, then run in a thin layer chromatography. Run your own antioxidant too. The mixture will form bands according to the solubility and molecular weight. From the band of your own anto-oxidant, determine if the mixture gives the same band with the same retardation factor (Rf).. If it does, then the claim of the manufacturer is right.
