The effect of temperature on the rate of enzyme activity:

The rate of an enzyme reaction increases with the raise in temperature. Many enzymes are adversely affected by high temperatures. A100C rise in temperature could increase the activity of enzymes by 50 to 100%. Usuallly, the reaction rate increases with temperature to a maximum (optimum temperature) and then declines with the further increase of temperature. For example, most of the animal enzymes rapidly become denatured at temperatures above 40°C. Over a period of time, enzymes could be deactivated at moderate temperatures. Storage of enzymes at 5°C or below is found more suitable. Some enzymes lose their activity at frozen temperature.
