Amino acids differ from each other by the nature of the R group. Shown below are the amino acids serine and isoleucine. Classify the R group in each amino acid as polar or non-polar. The R group in Serine is polar because it has a OH on the R chain. The OH groups are polar because they can form hydrogen bonds with water wich is a polar solvent. On the other side, the R chain on the Isoleucine is non polar because it has a C chain. The C chains are non polar because the bond C-C and C-H don´t have enough difference on electronegativity to form hydrogen bonds with polar solvents.
As a general rule the OH groups are polar and the C chains are non polar (the longest the chain is, more non polar is the compound).
