The lunch menu from the Hillsborough County public schools is analyzed. It is offering a flexible meal that varies from day to day and is planned based on the daily nutritional requirements. The standards of United States Department of Agriculture are followed during the meal plan. The calorie values are calculated assuming that each 1 gram of carbohydrate and proteins provide 4 calories and 1 gram of fat provides 9 calories. As per the AMDR (Acceptable Macronutrient Distribution Ranges), the recommended macronutrient distribution of total food intake is Carbohydrates 45-65%, Protein 10-35%, and Lipid 20-35%.

From the lunch menu of April month, it can be observed that the average number of calories and macronutrient distribution per each lunch is varying from day to day. The number of calories on Mondays is ranging from 830 to 1100 calories, in which the carbohydrate, protein and lipid distribution is within the range of AMDR values. However, the total number of calories, calories from fat and sodium content is increasing towards the Friday. No foods with empty calories are included, vegetables and fresh fruits are included.

The food is made fresh in the school kitchen and students do have the choice to choose their meal plan by calculating the caloric values based on “My Meal Plan.” The website is providing the information about nutritional values of each food included in the menu and also providing the information of allergens and special diets. Overall, moving towards Monday to Friday, the protein, total fat, saturated fat and sodium content is increasing, while the cholesterol percent falls within the recommended ranges.
