The chemical structures of three different types of carbohydrates are shown here. Glycogen H,OH CH OH Galactose, a sugar Sucrose, a sugar CH2OH sCH2OH HO OH H OH H Ho CH2OH H OH OH Answer the following questions. (Hint: Referring to the preceding chemical structures may help.) * What is the molecular formula of sucrose C12H22O11 . Is the monosaccharide shown here in its linear form?! No The structure of galactose seen here has asymmetric carbon(s). Therefore, galactose have enantiomers. " A molecule of glycogen requires and 1-.6 linkages between its individual monosaccharide units.

Explanation / Answer

a. Asymmetric carbon refers to a carbon atom which is bonded to for different groups. Here, in glactose,

C1 is bonded to OH, O, H and CHOH

C2 and C3 are both bonded to CHOH, H, OH, CHOH

C4 is bonded to CHOH, H, OH, CHCH2OH

C5 is bonded to CHOH, O, H, CH2OH

C6 is bonded to H, H, OH, CH

It is clear that only C1, C4, C5 are bonded to four dofferent groups, thus galactose has three asymmetrical carbons.

b. Enantiomers of galactose can be formed by rearranging the H and OH group present on the 1st carbon upside down.

c. The glycosidic bond in glycogen is formed by linking 1-4 Carbon of glucose molecules except 1-6 carbon which is formed at branches.

d. Monosaccharides are linked by glycosidic bond in order to form complex carbohydrates which upon hydrolysis releases glucose molecules.

e. GI index of a food is higher when the dominant carbohydrate is a sugar than when it is polymer.
