water soluble vitamins have specific chemical structure which allows them to interact with the molecules of water. when water soluble vitamins are added in the water they make a specific kind of bonding patterns with water molecules and dissolves in water. By afdition of them in water they changes their chemical structures and dissolves in water. water soluble vitamins are hydrophilic in nature hence the dissolved in water.
fat soluble vitamins are Vitamin A D E and K. These are the hydrophobic compounds which cannot make interaction with water molecules that is why these are not soluble in water. But they have specific groups which makes them capable to dissolve and fat. They have a specific chemical structures and molecules which allows them to make bonding and interactions with fat molecules.
