Low glycemic Moderate Oatmeal e Orange whole wheat (used twice) Sally keeps a "diet diary" that records what she eats and her thoughts on her efforts at weight loss. She is currently enrolled in an introductory nutrition course and hopes to use what she learns to help her control her weight. Activity Directions 1. Use the words in the bank to complete this sample entry from Sally's diet diary 2. Remember to use only words listed. Also note some can be used twice Today, we learned more about carbohydrate (CHO) and I now see how it can influence weight control. As I look at my food record I see that the sources of CHO in my record come from a white flour bagel, jam for my bagel, a 12 oz. bottle of juice, coffee with sugar, white flour rolls, white bread, cookies, fruit, veg- etables, low-fat milk, and Frosted Flakes cereal. My pancreas must be producing a lot of insulin when I eat these mega CHO foods so that I will not havr hyperglycemia for bery long. Too much of this hormone can lower my blood sugar below normal level ( a state of hypoglycemia). When this happens the pancreas will produce glucagon to raise blood sugar.
Body uses CHO in 3 ways:
1. Glucose.(now)
2. Glycogen. (short-term)
3. Fat. (long-term storage)
But, I also know if I do not eat any CHO I will have to use up all the glycogen that I have stored in my liver and muscles. If this happens I will have glucose for a while and I will then have to go into a state of gluconeogenesis to make glucose from the non-CHO sources of fat and protein. If I use the glycemic index as a guide I will cjoose grains such as barley and whole wheat. These foods have moderate or low glycemic index levels and will replace most of the white flour and high sugar snacks and sweets that I have been eating. This will mean that I will not produce as much insulin to lower my blood sugar. I will consume less calories and will not store as many as fat for long-term storage.
If I change my CHO choices to moderate and low glycemic index foods my new breakfast could include:
1. oatmeal
2. orange
3. whole wheat.
