Ans-1 the PUFA/ SFA ratio is a criteria to measure the hardness and unsaturated fatty acid. If PUFA/ SFA ratio is high then it will be less hard and unsaturated fatty acid content will be high but if this ratio is low then it will become hard and saturated fatty acid content will be high.
A high ratio will be indicator of good meat while a low ratio will be indicator of bad meat.
