The tomato paste (223 lb) is 45% solids and the ingredient manager needs to figure out how much water to add to achieve a final product of 15% solids. On a weight basis (lb) how much tomato paste and how much water would be required for the 1000 lb batch. Does she have enough, and if not, how much more does she need. The manager does have 100 lb of a 60% solids tomato paste but must make it into 45% solids for mixing and pumping. She must figure out how much 45% solids tomato paste she can make and will this be enough to complete the batch.

(d) He purchases a centrifuge having an operating volume of 0.1 m3, bowl diameter 7 cm and outlet of 4 cm. The wine (1400 gal) has a specific gravity of 984, viscosity 1.095 x 10-3 N s/m2, containing 5% solids at a density of 1100 Kg/m3. He is presently running at 5,000 RPM and clarifying at a rate of 150 L/h. The centrifuge can run at 10,000 RPM and he is interested in running at the higher speed but needs to make sure he has enough wine for the new feed rate. Calculate the new feed rate for the increase in RPM and how long would he have to run in order to centrifuge the entire batch of wine. Also, determine the minimum particle size that can be removed at this new speed. Other than bowl speed, all other conditions remain the same.
