Question4 A cafeteria has five service work stations as given below with the average service time evaluated. Sequence Service Delivered Work Service Station 3*3-9 Marks Average Service Time Serve vegetables Serve entrée Serve soup Serve desert Serve drink Collect money 1 2 20 seconds 30 seconds 20 seconds 15 seconds 10 seconds 60 seconds 4 1) What is the bottleneck activity and the service capacity per hour? 2) In which way can the number of Work Service Stations may be reduced, and by how much, while maintaining the same service capacity? Draw a product flow diagram. 3) Suggest a way of increasing the service capacity of the cafeteria by the addition of one additional Work Service Station. Draw a product flow diagram. What is the capacity of your improved system?Explanation / Answer
1) Collect money takes the maximum time. Therefore, it is the bottleneck activity
Service capacity per hour = 3600 seconds per hour / service time 60 seconds = 60 per hour
2) Number of Service stations can be reduced by assigning activity 1 and 2 to one workstation and activity 3,4,5 to second workstation, while activity 6 is assigned to the third workstation. This way, only 3 workstations are required and cycle time is same (60 seconds)
3) Another workstation need to be added to activity 6. This will reduce the cycle time to 30 seconds. Activity 2 and 6 will become bottleneck.
Capacity of improved system = 3600/30 = 120 per hour
