Some disadvantages to linear programming include the fact that usually all of the variables that need to be taken into account in order to solve a problem cannot be quantified in a linear manner. The assumptions made in linear programming are also unrealistic, because a linear relationship assumes that factors never really change, when in reality they do. Linear programming is also applicable only to problems where the constraints and objective function are linear; where they can be expressed as equations which represent straight lines. In real life situations, when constraints or objective functions are not linear, this technique cannot be used. Factors such as uncertainty, weather conditions etc. are not taken into consideration. . Finally, limiting the range of the problem also limits the possible solutions that are given in the problem.

All the above said points are good but are out of context. The linear programming problems are simpler version problem that provides optimal solution to some simple problem.
There are advance versions of linear programming problems such as dynamic programming, non linear programming etc. that takes care of non-linear and variable and dynamic constraints.
The assumption are valid and are for good, because solving a problem with variable will become a problem and will involve calculation that will surpass the capabilities of normal computers.
