My groups home made fermentation project is BOZA (turkish drink), we are asked the points highlighted in yellow and our comparison parameter is time, the normal fermentation takes 24 hrs but we will have two sets of experiment and the second one will hold the change in time to 36hrs , after this change what happens?, the teacher asked us to find the gas production and consistency of the product, after the 2nd set fermentation time ended(36hrs).

A literature survey will help the students to decide on their comparison and measurement parameters.

The second one will hold the change in time to 36 hrs, after this change a lot of carbon dioxide (CO2) evolves out.

Explanation: Generally, in the fermentation process, carbon dioxide is the by-product. Since the fermentation took more than the normal time of 24 hrs, i.e. 36 hrs, more carbon dioxide generates, which causes a too much foul smell.
