1]this is because the hydroxyl group is more acidic in nature and ittacks the corresponding H+ ion and forms the respective ester

2]this reaction can be carried backward too that is ester and water can react together to form an acid and alcohol...to avoid this back reaction sulphuric acid is used...it is basically a dehydrating agent and absorbs the water..
