When the cell is fed glucose and it is in aerobic environment then the aerobic respiration occurs and in aerobic respiration 38ATPs are produced per glucose. When the yeast is shifted to an anaerobic environment them fermentation occurs and in fermentation only 2 ATPs are produced per glucose molecule. Now if the cell wants to generate 19 times more ATPs than it could produce then the rate of consumption of glucose for yeast cell will be 19 times higher than that of aerobic respiration condition's consumption rate.
