Cooks are warned to not prepare highly acidic like chile and pasta sauce in aluminum pans because this acidic condition cause oxidation of Al to form the Al3+ ion. These Al3+ ions is the basic reasons of development of neurological disorder.

Dietary intake of Ca is important for good health. It would not be practical to manufacture cookware using calcium rather than aluminum due to followinf reasons:
The Ca of pan reacts with air within weeks, if not days and form calcium oxide as follows:
2Ca + O2 -----> 2CaO
this CaO will react with H2O of air to form calcium hydroxide as follows:
CaO + H2O -----> Ca(OH)2
This Ca(OH)2 also form calcium carbonate with reaction of CO2 of air as follows:
Ca(OH)2 + CO2 CaCO3 + H2O
Ca at room temperature reacts with water to form explosive hydrogen gas, with removal of heat because this reaction is exothermic. Due to heat temperature increase which helps to increase speed of reaction more. After some time we have a situation which can quickly go out of control:
Ca + 2H2O -----> Ca(OH)2 + H2
This H2 gas reacts with O 2 of air as follows:
2H2 + O2 -----> 2H2O + energy
These energy may be a reason of explosion with 15 seconds so we do not use cookware of calcium .
