The enzyme amylase main function is to convert starches into glucose that can be digested easily and get absorbed into the blood in humans and most animals. It breaks glycosidic bonds and change their basic structure using ionic charges.
Enzyme denature due to changes in pH by altering the ionic charges of protein. Ionic bonds results in the enzyme's functional shape. When the charge of an ion alters, though, the enzyme's shape get alter also, that results in variation of its function and this causes in the low level of an enzyme or compleately dissapear of this enzyme.
