Question

Chef James is making his special Cream of Chicken soup for a luncheon. Sixty guests are expected and his recipe serves 4 people.

Cream of Chicken Soup:

8 tablespoons butter

2/3 cup flour

4 cups chicken broth

2 ½ cups cooked, diced chicken

½ cup heavy cream

2 teaspoons sherry

1 tablespoon salt

He wants to make enough to serve all sixty guests at one time. To decide how much of each ingredient he will need, multiply each of the recipe ingredients by the number of batches of soup Chef James needs to prepare.

Chef James has salt in his pantry but needs to buy all of the other ingredients. All of the ingredients in his recipe are measured by VOLUME. Chicken and flour are sold by WEIGHT, and butter is sold by the stick. Use the following information to help prepare a shopping list (since they won’t sell you ¼ of a stick of butter or ½ pound of flour, round your answers to the next whole number):

1 stick of butter = ½ cup

1 pound of raw chicken yields 1½ cups of cooked, diced chicken.

1 pound of flour yields 4 cups

4 quarts = 1 gallon

2 pints = 1 quart

1 ounce = 2 tablespoons

Calculate for Shopping List:

____sticks butter

____pounds flour

____gallons chicken broth

____ pounds chicken

____quarts heavy cream

____ ounces sherry

Think about it:

All conversion factors in the Metric System are based on multiples of 10. Think about the English System. Is there a standard conversion method? Does this pose any problems? If so, please explain what they are.

Explanation / Answer

--Sticks of Butter :

He need 15/2 cups of Butter and that is equivalent to 28 + 1/2 sticks of butter

hence he needs 29 sticks of Butter

---Pounds of Flour

He need 15*(2/3) cups of flour = 30/3 = 10 cups of flour

And as 4 cups = 1 pound

=> 10 cups = 1/4 (10) = 10/4 pounds = 5/2 = 2.5 pounds

Hence he needs 3 pounds of flour

---gallons chicken broth

He need 15*4 = 60 cups of chicken broth

And 1 quart is equivalent to 4 cups

Hence 60 cups is equivalent to 60/4 quarts = 15 quarts

Now 4 gallons = 1 quart

Hence 1 quart = 4 gallons

=> 15 quarts = 4*15 gallons = 60 gallons

So he require 60 gallons of chicken broth

---pounds chicken

He needs 15*(5/2) = 75/2 cups of cooked chicken

1 pounds yield 3/2 cups of cooked chicken

=> 3/2 cups cooked chicken = 1 pounds raw chicken

=> 1 cup = 2/3 pound chicken

=> 75/2 cups = (75/2)(2/3) pounds chicken = 25 pounds raw chicken

So he needs 25 pounds of raw chicken

---quarts heavy cream

1 quart = 4 cups

He needs 15/2 cups heavy cream

=> 4 cups = 1quart

=> 15/2 cups = 15/8 quarts = 1.875 quarts

Hence he needs 2 quarts of heavy cream

---ounces sherry

He needs 15*2 = 30 tablespoons of sherry

2 tablespoons = 1 ounce

=> 30 tablespoons = 30/2 ounces = 15 ounces

Hence he needs 15 ounces of sherry
