Osteoid is the organic portion of bone matrix. gelataneous sunstance made up of collagens. It is unmineralized.and is the precursor for formation of bone tissue.these osteoids secretes osteoblasts to form bone tissue.

When the osteoid becomes mineralised the adjacent cells becomes bone tissue.the by releasing calcium, magnesium, and phosphate ions into the collagenous matrix forms a crystalline mineral

Lack of collagen fibers and their mineralization leads to formation of soft tissue that is called osteomalacia.
