Oleic acid dissolves in ethanol and is not soluble in water and forms a layer above the water surface. When a a drop from the solution of oleic acid and ethanol is poured onto water surface ( lined with lycopodium powder) the ethanol gets dissolved in water while the oleic acid molecules stands up with thier hydrophillic end on the water suface.
