on looking at the results, there are two possibilities. One is that the content of the protein in two different species of the bird may be same as they might have shared the common ancestors. Another thing is that there are certain functional proteins that are common in all the eggs. these proteins are the basic proteins needed for the functioning of the developing baby inside the egg.

For every protein, there will be different PI. you have to identify the protein and then you will be able to know its PI easily. other directly measure the PI of your protein. The reaction of amino acids depending upon the enzyme used on the protein.
